How to make eight ball coki icee (Vadakkal recipe)

The Eight Ball Recipe Ingredients (2 cups) coconut milk (1 cup) water 1 teaspoon coconut oil 1/2 teaspoon salt (or more to taste) 2 cups ice cream (1 1/4 cups) 1/3 cup chopped coconut 1/8 cup coconut sugar 1/16 cup water 1/6 cup sugar 2 tablespoons coconut oil (or butter) 1 tablespoon sugar or more to sweeten the mixture Method In a bowl, combine all the ingredients except the coconut milk and coconut oil.

Make sure that you don’t over mix them.

If it’s too thick, you can add a little more water to thin it. 

In a large saucepan, melt the coconut oil in the microwave for about five minutes. 

Add the coconut sugar, coconut oil and the remaining coconut milk.

Heat it gently, and keep stirring constantly. 

When the sugar melts, add the water and coconut milk mixture, and mix well. 

Continue to heat it for another minute. 

While the coconut mixture is still hot, mix the ice cream. 

Remove the ice cubes from the bowl and add them to the coconut-milk mixture, mixing thoroughly. 

Put them in a small saucepan and heat it up on low heat. 

Whisk the coconut water and sugar together very gently. 

Now add the remaining 1/5 cup coconut oil to the saucepan.

Keep stirring for a few minutes to dissolve the sugar and melt it.

Now pour in the ice-milky mixture and whisk it until it’s smooth and creamy. 

Pour in the remaining water and mix until the mixture comes together.

You should have a smooth and silky consistency.

If the mixture is too thick or too stiff, you might have to add more water. 

Cool the ice cube-mixture in the refrigerator for a couple of minutes.
